1 15oz. can rinsed white beans
¼ c. fresh flat-leaf parsley, chopped
6 Peppadew peppers, chopped
2 scallions, thinly sliced
2 T. Greensboro Olive Traders Basil Infused Olive Oil
1 T. Greensboro Olive Traders Lambrusco Wine Vinegar
Kosher salt and pepper
Toss together all ingredients except parsley in a bowl. Add parsley just before serving. Can be made ahead and chilled up to 6 hours.
